Red Lentil Soup

Ingredients:

  • 2 cups red lentils
  • 1 onion (chopped)
  • 1 carrot (chopped)
  • 2 tablespoons flour (or substitute with a potato)
  • 0.5 tablespoon tomato paste
  • 0.5 tablespoon pepper paste
  • 1 teaspoon salt
  • Mint, cumin, black pepper (optional)
  • 2 liters hot water
  • 3 tablespoons olive oil

  • Instructions:
    • 1- Heat olive oil in a pot, sauté chopped onion until golden.
    • 2- Add the flour, continue stirring on low heat. Add tomato paste, chopped carrot, and lentils.
    • 3- Pour in the hot water, cover, and simmer until the lentils and carrot are soft, stirring occasionally.
