Ingredients:
- 4 tablespoons olive oil
- 1 medium onion, finely chopped
- 1.5 tablespoons tomato paste
- 0.5 tablespoon pepper paste
- 2 tomatoes, peeled and chopped
- 2 green sweet peppers, chopped
- 2 garlic cloves, minced
- 500 grams dry beans (soaked overnight)
- 3 cups water
- 1 teaspoon salt
- 0.5 tablespoon cumin
- 2 teaspoons black pepper
- 2 teaspoons red pepper flakes 2
- 50 grams pre-cooked meat chunks /ul>
- 1- Soak the beans in warm water overnight. The next day, rinse and drain them, then cook in enough water to cover the beans over medium heat for 20 minutes, stirring occasionally. Drain the beans.
- 2- In a large pot, heat the olive oil and sauté the finely chopped onions until soft. Add the finely chopped peppers and garlic, sauté for a few more minutes.
- 3- Add the peeled, chopped tomatoes, the tomato paste, pepper paste, and the pre-cooked meat. Pour in the water and bring to a boil.
- 4- Once boiling, add the drained beans and season with salt, cumin, black pepper, and red pepper flakes. Stir frequently and cook until the beans are tender, about 50-55 minutes. Add hot water if needed during cooking.
- 5- Serve with pilaf and pickles.
