- 1- Boil the dried peppers and tomatoes in boiling water for 10-15 minutes until softened. Drain and set aside.
- 2- Place all the ingredients, except the rice, into a food processor and blend until smooth. Transfer the mixture to a bowl and combine it with the rice, kneading with your hands until well mixed.
- 3- Stuff the softened dried tomatoes and peppers with the rice mixture, leaving some space at the top (do not overfill).
- 4- Arrange the stuffed tomatoes and peppers side by side in a pot. Place a plate over the stuffed vegetables to keep them in place.
- 5- Add boiling water and olive oil to the pot. If desired, you can add some tomato paste to the water for color.
- 6- Cover the pot with a lid and cook until the stuffing is fully cooked. If the water level is insufficient during cooking, add more hot water as needed.
