Meatless Stuffed Dried Tomatoes and Peppers

Ingredients:

  • 1 onion
  • 5 cloves of garlic
  • 1.5 cups of rice
  • 2 tablespoons tomato paste
  • 1.5 tablespoons pepper paste
  • 1 cup of oil
  • Sumac
  • 2 tablespoons pomegranate syrup
  • Cumin, salt, black pepper, paprika, dried mint, lemon salt, red pepper powder (to taste)
  • 20 dried tomatoes
  • 20 dried peppers

  • For the Sauce:
  • Boiling water
  • Olive oil
  • (Optional: Add tomato paste to color the sauce, if desired)

  • Instructions:
    • 1- Boil the dried peppers and tomatoes in boiling water for 10-15 minutes until softened. Drain and set aside.
    • 2- Place all the ingredients, except the rice, into a food processor and blend until smooth. Transfer the mixture to a bowl and combine it with the rice, kneading with your hands until well mixed.
    • 3- Stuff the softened dried tomatoes and peppers with the rice mixture, leaving some space at the top (do not overfill).
    • 4- Arrange the stuffed tomatoes and peppers side by side in a pot. Place a plate over the stuffed vegetables to keep them in place.
    • 5- Add boiling water and olive oil to the pot. If desired, you can add some tomato paste to the water for color.
    • 6- Cover the pot with a lid and cook until the stuffing is fully cooked. If the water level is insufficient during cooking, add more hot water as needed.
