Yayla Soup

Ingredients:

  • 2 cups yogurt
  • 2 tablespoons butter
  • 2 teaspoons salt
  • 1.5 tablespoons flour
  • 2 tablespoons lemon juice
  • 1 egg yolk
  • 6 cups water
  • 1 teaspoon red pepper flakes
  • 3 tablespoons olive oil
  • 1 cup rice (rinsed and drained)
  • 2 teaspoons dried mint

  • Instructions:
    • 1- In a pot, mix the yogurt, flour, and lemon juice until smooth. Add the egg yolk and continue mixing.
    • 2- Add the water and cook on medium heat until it starts to boil. Then, add the rinsed and drained rice and bring to a boil again.
    • 3- In a separate pan, heat olive oil and butter, add dried mint and remove from heat.
    • 4- Pour the oil mixture over the soup, stir, and serve
